When it is too hot to bake....... and you feel like some thing sweet
" Chesna's Pizza " base
3 cups flour
1 cup tepid water
3tbsp olive oil
1/4 tsp salt
1 tsp sugar
1 tbsp yeast (or 1 packet)
In a bowl add yeast, sugar and water. Leave to froth (about 10 mins in Tongan weather)
In a larger bowl add flour.
Make a hole in the center of the flour, add in oil, salt and pour in yeast mix.
Combine with hands (shouldn't be too sticky)
Tip out onto floured surface, knead for about 3-5 mins until dough is smooth and elastic.
Leave in a warm place to rise.
Knead again, 3mins or till elastic.
Cut in half, stretch / roll out. Makes two large pizzas.
I used cranberry & caramelized red onion as a base, then cubed raw pumpkin, feta and grated normal cheese. Use your imagination !!!!!!

Egg plant and mango dip
_Ingredients
Method
- 1 large, firm eggplant (750g), washed, dried
- ½ cup fresh breadcrumbs
- ¼ cup extra-virgin olive oil
- Juice ½ lemon
- 1 tablespoon chopped parsley
- 1 garlic clove, crushed
- Pita crisps, to serve
Method
- Pierce the skin of the eggplant in several places. Place on a microwave-safe plate and cover with plastic wrap.
- Microwave on high (100%) power for 10-15 minutes until very soft. Cool. Halve eggplant and scoop out flesh.
- Place eggplant flesh, breadcrumbs, oil, lemon juice, parsley and garlic in a food processor or blender. Process until smooth. Season to taste.
- Serve with pita crisps and Mango Daiquiri.

Chesna's Aubergine / Eggplant salad
Ingrediants
Potatoes cubed
Aubergines cubed
Long beans sliced
Onions chopped
Crushed garlic
Olive oil lots
Smoked Paprika
Pine nuts or pumpkin seeds
Method
Cook potatoes in microwave or pot.
Heat olive oil in pan add crushed garlic add aubergine, potatoes, beans, paprika, lemon juice and pine nuts or sunflower seeds. Heat through and serve hot or cold. Chopped basil can be added.
